Popis: Shiokara undoubtedly deserves an honourable place on the list of extreme culinary arts. The base is squid meat, octopus, sea cucumber, or another randomly selected sea creature. It is cut into thin strips and wrapped with a paste of gut lining. Either their own or that of another marine animal. This base will be watered, closed in an air-tight container and left alone for several weeks, months or even years. What comes out will definitely smell different to that which was put in. The fermented pieces of meat adopt a gel-like to slightly transparent structure during the decomposition. The chopped intestines, together with oil and herbs, turn into a smooth consistency like honey. No wonder Shiokara is usually served with whiskey or other strong alcohol.
